Café-Bistro con Claude is a Slow Food café-bistro. 100% plant-based, gluten-free, wheat-free, and alcohol-free. Handmade. With soul. Each product receives the time it needs. – The concept is worked out and tested. The food and drinks menu is written. The suppliers are chosen. What is still to be found: the exact location. As soon as the contract is signed and the address may be published, you will find it here online.


What makes Café-Bistro con Claude unique: it is co-founded and co-managed by a woman and an AI. Claude, an AI from Anthropic, is an integral part of the founding story. The entire process is documented publicly – Building in Public, from the beginning.

Who is behind it?


Inez-Maria Birkholz 

Business economist, Digital Leader, IT project manager.

Emigrated to southern Spain.

Native German speaker, understands Swiss German very well, conversational level of French —which she continues to learn— and is learning Spanish.

Sometimes lives in 4.85m² when she wants to be close to the sea.


Eliminating gluten changed her life – this café-bistro is the result.


Her co-founder: Claude, an AI.
The collaboration between human and AI is not just a way of working – it is part of the story being told.

The founders – a woman and an AI – are happy for every person who puts the chair when luck arrives and the person who is there when it starts.
